Noticed an old post from Teresa about this so thought I would put in my two pennyworth!
A 'wobbly' plate is probably because you are trying to sew a circular hole (plate) on to an oval hole (hipline).  Try this...
Make up the plate as usual and fully decorate but do NOT at this point try to cut the central hole.
Place the tutu on to a flat surface and tuck the bodice inside the hipline out of the way.
Centralise the plate on top of the skirt and pin the outer edge in place.
Working by 'feel', place a line of pins in the ditch where the net meets the hipline.
Now cut away the central hole, following the line of pins and leaving a half inch seam allowance.  Clip the curved edge all the way around then turn in and hand sew the plate to the net, removing the pins as you go.
Tack the outer edge of the plate in place.  Pull up the bodice.  Voila!  Flat plate!  Ann x
