Are you looking at the Sunday sessions?

Looks like they may be Tutor Assist sessions - unstructured sessions where participants take along their own projects, manage their own learning and the Tutor's knowledge and skills are a resource available to them.

To get the best value from this type of session-
- it's worthwhile thinking through what you want from the time and your project;
- which aspects you will want the Tutor's knowledge/tutition for; and,
- let the Tutor know what you have planned (because it helps the Tutor ensure that you get your share of the personal attention time especially as some are more adept than others at managing participants who sometimes hog the attention).

For a 6hr session with 6 participants, including breaks and mealtime, you can anticipate up to a total of 35-40 minutes of the Tutor's attention spread over the duration.
Try to avoid spending the time cutting out or doing things you know how to do already unless what you want from the session is space to cut out or the company of like-minded people or the reassurance of some hand-holding with a knowledgeable person available in case you run into a problem.

using it as a fitting surgery is a great plan -

When our sewing club runs one of these sessions I always appreciate when someone lets me know beforehand about which 2 or 3 prepared patterns and/or toiles they will bring along together with a rough idea about what their fitting issues are.  It helps to pair people up with similar alterations.
